I don't know exactly how Tex-Mex is different from California Mexican food, but it's mucho better. I've been to little hole-in-the-wall places in West Texas where the food just blows away any Mexican food I ever had in California.
There's a place in Portland called Esparza that bills itself as "Tex-Mex", and it's the only place I've had the stuff. I find myself wanting to eat there every time I go to Portland. Whatever that is in the picture, I would wolf it down without hesitation.
